Vege soup

This is pretty easy and tasty.

You'll need the following ingredients but if you don't have everything it's good to improvise!  It also helps to have a hand blender but I think it would make a nice vege stew if you don't!

  • 1 Parsnip, 1 Turnip, 1 Squash.
  • 2-3 medium sized onions.
  • 1 Leek
  • 2 Vege stock cubes
  • Olive oil
  • A bit of red or white wine vinegar
  • Salt, pepper, chilli powder (optional) and any other common herbs you might like (rosemary, thyme, sage)

Method:

Peel and dice 

  • 1 Parsnip
  • 1 Turnip
  • 1 Squash

Put into baking dish/tray

  • Drizzle olive oil over the vegetables (don't go too crazy!) 
  • Sprinkle salt, pepper and any other herbs you like and a couple of tea spoons of chilli powder over too (if you have it and want it a bit spicy!). 

Roast for about 35 to 40 mins at 180 but keep your eye on it so it doesn't burn.

Whilst the above are roasting, dice and put into cooking pot or similar: 

  • 2-3 medium sized onions
  • 1 leek
  • 2 vege stock cubes 
  • A splash of olive oil.

Fry for a few minutes until it turns golden-'ish' in colour, add a little water to stop it burning and stir as it browns off.

Then,

  • Add a cup of water, stir and place the lid over the pot (on a low heat) so that it sweats, stirring every few minutes and adding a splash of water to stop it burning if needed. 
  • Do this for about 6 minutes then turn the hob off (keep the pan covered).

Once veg is roasted,

  • Tip everything into the stock (above) and add about 2 litres of boiled water and a generous splash of red wine or white wine vinegar.
  • Simmer on hob for another 30-40 mins, stirring occassionally.

Allow to cool then use a hand blender to whizz it up! 👨‍🍳
